Gluten-Free Saint Patrick Day Sugar Cookies


Happy Saint Patrick's Day!! When I think of this festive holiday, the first color that comes to my mind is green! So here is a fun, easy sugar cookie recipe with fluffy green buttercream!

These cookies are amazing. Not only are they fluffy, soft, and delicious, they also only have 4 ingredients! That's right, 4 ingredients!! They are super easy to make and are sure to become a family favorite!


Gluten-Free Saint Patrick Day Sugar Cookies:


Sugar Cookies:

4 tbsp softened butter

¾ cup granulated sugar

1 egg

1 cup gluten free 1-1 flour (I used Bob's Red Mill)


Frosting:

8 tbsp softened butter

½ cup powdered sugar

¼ tsp vanilla

Green food coloring (optional)


Directions:

  1. Preheat oven to 350 Fahrenheit

  2. With a stand or hand held mixer, cream the softened butter and granulated sugar together. Mix until creamy.

  3. Mix in the egg until well combined.

  4. With a spoon or spatula, add in the flour and mix until well combined.

  5. Roll out your cookie dough, and cut out shapes with cookie cutters!

  6. Refrigerate the cookie shapes for 5-10 minutes. This will help them hold their shapes while they cook.

  7. Bake for around 10 minutes. Pull out before they get too hard because they harden as they cool.

  8. Cool on a wire rack for a few minutes.

  9. To make the frosting, mix the softened butter with an electric mixer until fluffy. Mix in green food coloring.

  10. Next, mix in powdered sugar and mix until fluffy and well combined.

  11. Finally, add in vanilla extract.

  12. Frost your cookies!

  13. Eat and enjoy!!
