Delicious Vegetarian Breakfast Burrito Recipe


Hi everyone! There's no better way to start off the day than with vegetarian breakfast burritos! I've always been a fan of breakfast burritos, but I would usually just add in random amounts of potatoes, onions, and carrots. The test-burritos were still good, but I wanted to make up a delicious recipe instead of using random amounts.


These amazing breakfast burritos include potatoes, peppers, onions, garbanzo beans, spinach, homemade guacamole, and a yummy garbanzo bean sauce. I'll include step-by-step pictures to make it easier.


  1. Potatoes


Peel the potatoes and lay your potatoes down onto a cutting board. Cut into circular slices (first picture), and then cut the circles into sixths (second picture). Set aside.


2. Onions

Cut the onions into small squares, as you can see in the picture above.


3. Peppers

Cut the peppers into thin, long slices (picture 1), and then cut the slices in half (picture 2). Set aside.


4. Garbanzo beans

Strain a can of Garbanzo beans above the sink, to get all of the excess juice out. We will not be using the juice, so you can do whatever you want with it. Set the garbanzo beans aside.


5. Slightly cook potatoes and onions.

Since potatoes and onions take a bit longer to cook, we will cook them for about 1-2 minutes, until they are slightly soft. Keep in mind that we are going to cook these with the other ingredients for a longer amount, so only cook them until slightly softened.


6. Add in Peppers

Now that the potatoes and onions are slightly cooked, we will add in the sliced peppers. Cook the veggies until the peppers are cooked all the way through, and until the potatoes and onions are completely cooked. (If they are turning too brown halfway through, add in a fourth cup of water, to stop the burning)


7. Add in garbanzo beans and spinach

Now, add in garbanzo beans and spinach. Cook for about a minute, to heat up the garbanzo beans. The cooked fillings are done!


8. Make guacamole

With a fork, mash one avocado (first picture). Cut 4 baby tomatoes into fourths, and add into the guacamole (second picture). Finally, add in 1 teaspoon of lime juice.


9. Build your burrito

Pile your potatoes, onions, garbanzo beans, peppers, and spinach onto a corn or rice tortilla. Top with the homemade guacamole, and your burrito is complete!

Delicious Vegetarian Breakfast Burrito Recipe

Ingredients:

-1 bell pepper

-3 potatoes

-1 onion

-1/4 cup spinach (optional)

- Sprinkle of salt

Guacamole:

-1 avocado

-1 teaspoon lime juice

-4 baby tomatoes

- Rice or corn tortillas


Directions:

  1. Peel 3 potatoes and cut them into circles. Then, cut the circles into sixths. Set aside.

  2. Chop 1 onion into small squares.

  3. Cut 1 bell pepper into thin, long slices. Then, cut the slices in half.

  4. Strain 1 can of Garbanzo beans, and set the beans aside (we will be using them later on).

  5. In a frying pan, cook potatoes and onions for 1-2 minutes, until slightly softened. If the bottoms are burning, add in tiny amounts of water.

  6. After the potatoes and onions are softened, add in the peppers. Cook the peppers, onions, and potatoes until all are cooked all the way through. Make sure to be stirring constantly, so they don't burn.

  7. Add in the garbanzo beans, and 1/4 cup spinach (optional). Cook for about 1 minute, to warm the beans up.

  8. In a medium-sized bowl, mash up 1 avocado with a fork.

  9. Cut 4 baby tomatoes into fourths, and add them into the guacamole. Finally, add in 1 teaspoon of lime juice. Your guacamole is finished!

  10. Pile the vegetables onto a tortilla, and top with the guacamole.

  11. Eat and enjoy!
