Delicious Roasted Veggie Tray


I don't know about you guys, but I LOVE potatoes. I also love carrots and cauliflower. Good news: this roasted veggie tray has all of those! Seasoned to perfection, this is one of my all-time favorite meals!

Plus, it's super easy! I make it for any time of the day!

Delicious Roasted Veggie Tray

Ingredients:

-6 potatoes

- 4 large carrots

- 1 head cauliflower

- 1 tsp garlic powder

- 1/2 tsp thyme

- 1/4 tsp chili powder

- 1/2 tsp pepper

- 1 tsp salt

- 1/2 cup olive oil


Directions:

  1. Preheat oven to 425 Fahrenheit.

  2. Peel the potatoes

  3. Dice the potatoes into squares. Set aside.

  4. Cut the ends off the carrots and peel them.

  5. Cut the carrots into circles. Set aside.

  6. Cut the green leaves off of the cauliflower and cut the cauliflower into florets. Set aside.

  7. In a small bowl, mix the thyme, garlic powder, pepper, salt, and chili powder together.

  8. Pour the carrots, potatoes, and cauliflower into a casserole dish. Drizzle the olive oil over the vegetables, and stir.

  9. Sprinkle the spice mixture onto the veggies and stir in.

  10. Bake for around 25 minutes, or until soft.

  11. Eat and enjoy!
