Balsamic Drizzled Watermelon Salad

Summertime is almost here, and with it, the season of watermelon! One of my favorite types of salad is fruit salad, and especially watermelon fruit salads! I hope you guys enjoy this delicious and healthy fruit blend!


For today's post, I decided to make a salad using grapes, watermelon, blueberries, and strawberries, and mint. I also made my own yummy balsamic sauce to drizzle over the salad. I wanted a balsamic based sauce because it can go really well with watermelon and strawberries. =) I thought that plain balsamic wouldn't taste the best with my other ingredients, so I decided to create a sauce using strawberry balsamic, and lime juice. You can see the exact amounts down at the recipe below.


First, we're going to chop the fruit up. Cut up 1 package of strawberries into quarters, and add them into a medium-sized bowl. Keep in mind that this bowl will be the one the salad will be in. Next, dice 6 cups of watermelon (slightly less than half of the watermelon) and add to the strawberries. Now that we have the strawberries and watermelon out of the way, let's move on to the grapes! You can measure out 2 cups of grapes and then cut them in half. After we add our grapes into the strawberry and watermelon mixture, let's add in our last fruit: the blueberries! We do not need to chop these or do anything to them. Instead, we'll add in 1 cup of blueberries to the salad bowl! Yum!







Now, let's make our Strawberry Balsamic sauce. This is actually very simple: in just a few easy steps, we'll have a delicious sauce to drizzle over our salad! As I highlighted earlier, I love the taste between watermelon and strawberry balsamic sauce. Make sure to buy a Gluten-Free Strawberry Balsamic Vinaigrette, because some brands might not be Gluten-Free. Strawberry Balsamic isn't as strong as regular balsamic, and it's a hint sweeter too. I thought that lime would pair well with the strawberry balsamic, so I decided to test it out! To make the sauce, you will need 1 tablespoon of lime juice and 1/4 cup of the strawberry balsamic vinegar. For the lime juice, you can use freshly squeezed juice or store-bought. I used freshly squeezed because that's what I had at my house, but store-bought lime juice will work just as well. Stir together in a small bowl and then lightly drizzle over the watermelon salad! Last, but definitely not least, it's time to add in the mint! I love mint on salads because it gives the feeling of freshness and it just makes salads taste better! This step is optional, but if you happen to have any spare mint leaves lying around your house, this would be a great thing to use it for. =) This is probably the easiest step: all you have to do is cut the mint up into small little sections. Now, sprinkle these over the salad.


Ta-da! Now you have your own scrumptious and healthy salad, perfect for summertime or any occasion!





Balsamic Drizzled Watermelon Salad Recipe


Ingredients:

  • 6 cups of diced watermelon

  • 1 package of strawberries

  • 1 cup blueberries

  • 2 cups grapes

  • 2-3 shredded mint leaves (optional)

  • 1 tablespoon lime juice

  • 1/4 cup strawberry balsamic vinaigrette

Directions:

  1. Cut up each strawberry into quarters, and add to a large salad bowl

  2. Cut up 6 cups (a little less than half of the watermelon) of watermelon, and dice. Add to bowl with the strawberries.

  3. Measure out 2 cups of grapes, and cut each grape in half, then add to the bowl.

  4. Get out 1 cup of blueberries and add to the salad bowl.

  5. Stir salad around.

  6. To make the strawberry lime balsamic sauce: Gather 1/4 cup of strawberry balsamic vinaigrette and add into a small bowl. Squeeze out 1 tablespoon of lime juice and stir into the strawberry balsamic.

  7. Lightly drizzle lime/balsamic mixture over the salad.

  8. Chop up fresh mint leaves (if using) and sprinkle over salad

  9. Eat and enjoy!
